This super simple recipe has quickly become an absolute house classic. At a BBQ, while enjoying a drink or simply as lunch..er's coffee break always a reason to make these delicious crostini with pea hummus. Some combinations are simply fantastic; crunchy, slightly sweet peas combined with salty, creamy feta has been delicious - but the addition of lemon and fresh mint makes it fresh, sparkling and as sunny as the first day of spring. And like most of my favorite dishes; it takes less time, less effort and it is not only good for your taste buds, but also for your body! My love is sometimes a little caught coffee break up in my cooking madness. It often happens that our fridge is so full of food that are freshly bought beers no longer bijpassen (and cold beer is surely one of the basic needs of the average man). He with laptop and all should move to the bedroom because I need the kitchen table to roll out pizza dough, or that we can not go to the beach because I first wanted to try a new dish. You have pity? That, of course he-le-fold totally unnecessary! Because the other side of the coin is that he will eat almost every day that is prepared with love and attention. So basically it is pretty quite happy with my hobby. For this recipe, he was even willing to go on the picture coffee break to show you how good it is. A face that speaks volumes, a picture is worth a 1000 words ... that so.
150g peas, fresh or frozen (or even defrost) * 100g feta, crumbled * bunch of mint * dash of olive oil * pinch of salt (optional because the feta is already quite salty) * juice of half a lemon (and additional to taste) coffee break
Preparation Turn your oven on Grill and drizzle some olive oil over the bread on both sides. Place the slices of bread under the grill and in the meantime make the peas hummus. coffee break Turn the bread when the top is crisp. Keep the good eye so it does not burn. Blanch the peas by immersing them in boiling water for about 1 minute. Then put all the ingredients for the hummus in a blender, and blend into a whole. It may not be completely smooth, there may still quite some peas and feta pieces visible. Taste the dip and season with some extra mint, lemon or salt. Lubricate the hummus on the crusty bread or serve the bread and use it as a dip
