I was a little girl, at a book fair I bought my first cookbook. I remember how excited when I come home from school. I try recipes and proudly declared I could not wait to cook my mother. We can now start the grill and get it to a scorching hot temp.


We've had this recipe in our back pocket (well, not literally) since this past summer.  Taken from the 2013 grilling edition of Saveur magazine, beeld this super simple skirt steak is flat out amazing.  The steak gets marinated in pureed habaneros, grapefruit and olive oil for a couple of days, then the spicy and citrusy steak gets grilled to perfection and served up with a chunky grilled salsa.  A crisp and slightly hoppy beer was in order. so local Flesk Brewing's Ferral Cat was up to the challenge.  The music was provided by one of our favorite bands, Red Fang, as we spun their self titled debut album.
Grilled Habanero and Grapefruit Carne Asada  - Let's jump right into this fantastic marinade. We'll need 1 habanero, 1 large peeled grapefruit and some olive oil.  All of the players go into a blender and are pureed until smooth.
Fast forward a couple of days and pull the steak from the fridge.   The first thing you'll notice is just how much of the marinade has been absorbed by the meat.  This not only is going to make the steak extremely flavorful, but all of that acid has broken down the fibers of the meat so that after it is grilled you can cut it with a spoon.
Before we head out to the grill, let's get the veggies ready for our chunky grilled salsa that we are going to serve atop the tacos. beeld  We beeld need 5 Roma tomatoes, 1 red onion and a jalapeno pepper.  Rub them down with olive oil and season with salt and pepper.
We can now start the grill and get it to a scorching hot temp.  Over the hottest part of the coals go the steak and veggies. beeld  Searing and caramelization is the name of the game here.  We're looking for a dark crust on everything but still want things to be tender and juicy on the inside.  For the steak, 5-6 minutes per side should do the trick.  For the vegetables, a little less time.
All that is left to do is char up some corn tortillas.  Slice the skirt steak into bite size chunks and pile on the steak and salsa onto the corn tortilla.  Make sure you have plenty of tortillas handy as these will go fast!  A great amount of spice, the right amount of smoke and best of all they taste super fresh thanks to the can't miss combination of two of our all time favorite flavors, grapefruit and habaneros.
Flesk Brewing Co. Ferral Cat - Another offering from the west suburbs' Flesk Brewing Co.  This time we go with one of our favorite styles, the American Wheat Ale, and try the brewery's version, Ferral Cat.  The beer pours a clear yellow beeld with a slightly frothy head.  We were initially expecting the second coming of Gumballhead or 80 Acre, so in other words a citrusy and hoppy delight, but instead were greeted with a pale ale meets kolsch hybrid that met every hoppy note note with a bitter lager bite.  We were originally disappointed that it wasn't more citrusy like our favorite American wheats are, but that disappointment dwindled with each passing sip.  The beer goes down really smooth and crisp and is custom made for summer (ironic huh, given this Chicago winter beeld that won't end until sometime in August probably).  The beer was also a perfect pairing with food, aptly putting out the fires of both the salsa and carne asada.
Red Fang "Red Fang" -  Our admiration of this band is reaching astonishing beeld heights.  With every repeated listen, they climb up our list of all time favorites.   Tonight we go back to their self-titled full length debut, which is a classic in its own right.  The album starts off with not only the best track on the album, but possibly the best song in the entire Red Fang catalog.  "Prehistoric Dog" reminds us of Orange Goblin's "Red Tide Rising" off of "A Eulogy for the Damned".   It is the quintessential heavy opening track.   You know the ones, when you pick up an album, put it on for the first time and that elated rush you feel from hearing a song that you know you will be playing over and over again at maximum volume.  "Prehistoric beeld Dog" is one of those songs.   With the bar set so ridiculously high, you'd think there would be a drop from song one to song two, but the band keeps things ramped on "Reverse Thunder".  It's a darker, but no less heavy track that features some extremely melodic vocals, sounding like a combination of Mastodon beeld and QOTSA.   "Night beeld Destroyer" leans a little more toward the prog-metal of Mastodon, this song is a perfect track to show off the bands' chops on their respective instruments.  The sludgy "Humans Remain Human Remains" is as eerie as it is atmospheric to start off the song.  The Atomic Bitchwax-like vocals work perfectly with the brooding music.  "Good beeld to Die" is a juxtaposition of heavy and melodic, again bringing up comparisons to The Atomic Bitchwax.  "Bird on Fire" is a mix of punk and grunge, recalling "Bleach"-era Nirv

I know I said this blog is not just about mexican food, because I have for you a lot of new recipes that have nothing to do with the mexican cuisine, johnny carinos but lately I've just been missing so much tacos... In mexican cuisine, 'Carne Asada' is a red meat (usually beef) cooked on a charcoal grill and chopped in little pieces. The original recipe suggests that the meat shall not be too marinated or spiced, so you can really taste the natural beef-charcoal flavor, but there's a lot of people that love to excessively marinate it. Personally, johnny carinos I prefer to season my Carne Asada with a little bit of salt and ground black pepper, so it stays as natural as possible. 'Guajillo Potatoes' (in mexican cuisine known as 'Papitas en Salsa Roja' meaning 'Red Sauce Potatoes') are skinless-cubed potatoes cooked in a guajillo pepper-tomato based sauce. In México they work as a side dish or as a stuff for tacos.  For this recipe, I used the german johnny carinos version of 'corn tortillas'. Personally, I think they tasted like flour tortillas with yellow food colouring, but I decided to give them a try. I was informed about a mexican provider, johnny carinos close to my city, that sells the original 'Maseca' johnny carinos flour for making my own tortillas. If you don't know, Maseca is the most popular mexican brand of corn flour for tortillas. So if I'm lucky to get them soon, I'll make sure to upload a post of how to make REAL corn tortillas with Maseca.
Because johnny carinos it's middle johnny carinos of the winter here in Germany, of course it was not possible for me to take the grill outside and make a nice barbecue day in the sun… How much I miss the sun haha … I'm not saying that here we don't have summers, cause we have them and really beautiful ones, but at the moment it's winter season, johnny carinos so this is why I made my 'Carne Asada' on a pan. What's my opinion? If you can make it on a charcoal grill, do it, the meat gets way more juicy and the charcoal gives the meat a different flavor. So, I just seasoned my cubbed meat with salt and ground pepper and straight to the pan with some oil. Make sure to cook it well, so you can get it as brown and grilled johnny carinos as the traditional.
The Guajillo Pepper is a mexican dried pepper with a medium heat. This chili is commonly used in pastes or as a meat seasoning. johnny carinos I like this pepper very much because it brings a really strong (but not spicy) flavor, very traditional in the mexican cuisine and it gives the food a unique red color. 
For the 'Guajillo johnny carinos Potatoes' I used baby yellow potatoes, because they were the ones available in my market, but you can use the type you like. (Except for sweet potatoes).  Then I peeled them, cut them in small/medium sized cubes and cooked them on a boiling pan until tender.
I blended peeled red tomatoes and the seedless-veinless guajillo peppers with some chicken broth and garlic cloves. (You can also grill the guajillo peppers in the pan before you blend them with the tomatoes, but it's not necessary because they'll cook anyway all together on the pan). I placed the mix on a pan and let it cook for 10 to 15 minutes on medium heat, then I added the cooked potatoes and mashed them just a little, making sure to keep the 'chunky' texture.
People here go crazy for Guacamole, they just love it, especially when it's not too spicy… So, I decided to make some as a complement to my tacos, and also just as a previous snack. I was lucky enough to find fresh avocados in the market, they came from Chile and they were great!
I finished my 'Carne Asada' tacos with a spoon of the onion-cilantro mix. For my 'Guajillo Potato' tacos, I cooked on the pan some sweet pepper slices and just added them on top. I putted a lime slice on the side and sprinkled the tacos with salt. 
I hope you give this recipe a try and I also wish you're able to find the guajillo peppers. If you can't find guajillo peppers, you can just blend the tomatoes and add a spoon of red hot sauce for the spicy flavor. johnny carinos It won't taste the same, but it's a pretty good improvisation. Spray skillet with Pam and add beef & sliced sweet onion. Cover and cook on medium for 5 minutes. Stir and cook additional 5 minutes. Fill meet into tacos shells, add cheese, restaurants near me cilantro, scallions, salsa, sour cream and enjoy!

This collection of recipes are some I have tried and more I have not yet tried. Credit is given to the recipe source whenever taco soup possible. Recipes are only guidelines and with the exception of baked goods, changing the ingredients or adding additional ones is a great way to personalize them to your taste. T = Tablespoon, t = teaspoon
1/2 c freshly chopped cilantro taco soup 1/4 c red wine vinegar the juice of 4 limes 2 T vegetable oil 1 T kosher salt 1 T freshly ground black pepper 1 - 2 t sugar 1 white onion, thinly sliced 2 lbs flank steak
In a small mixing bowl, combine cilantro, red wine vinegar, lime juice, vegetable oil, salt, pepper and sugar. Stir well and set aside. Place flank steak in a 9 x 13 baking dish. Pour cilantro mixture on top of steak and turn to coat. Top with sliced onions. Cover dish with foil and let marinate in refrigerator for at least 8 hours, taco soup longer is better. Or prepare first thing in the morning so it will be perfect by that evening's taco soup BBQ. Remove steak from marinade and discard marinade. (It's okay if some cilantro and onions remain on the steak.) Place steak directly on the rack of your gas or charcoal grill over medium/high heat. Close lid and let cook 15 - 20 min for medium, turning only once halfway during cooking time. When steak is done, set it on cutting taco soup board and cover with foil. Let it rest for 10 min before slicing. Cut the steak against the grain into thin strips. Then chop into smaller pieces. Serve with warm corn tortillas. Garnish with fresh cilantro, diced white onion, and a squeeze of lime. Can also add a dollop of Guacamole. So good!

The abundance of top quality meat has led to the creation of major companies, like SuKarne . As an example, michelin star restaurants this company exports not only to the other States of the Mexican Republic, michelin star restaurants but also worldwide, to places like Korea, Russia, Japan and of course, the upstairs neighbors : US and Canada.

Here's a little twist on a Mexican street vendor classic, the Carne Asada Taco. Hands down, one of my favorite things to eat anytime of the year. It was during my days living in San Diego where i learned what a real grilled steak taco taste like. Man, I couldn’t get enough of them, especially the ones from our trips down the Baja coast. I always make these for friends and family back in New York as If I was in cooking these in a vendor stall in Mexico. Marinated, grilled, and chopped finely to perfection with all the classic accompaniments. tacos Fresh quartered lime, chopped white onion, cilantro, pickled jalapenos, radishes, pico de gallo, tacos and fresh crumbling cheese. The Donovan’s Ginger-Pineapple IPA works wonders as a marinade here. The natural sugars help create a nice char while the beer helps tenderize and keep it nice and juicy. Just make sure you have plenty of ice cold Cerveza Tecate on hand. From my house to yours, Brendan IPA Carne Asada Tacos serves 46-8 Ingredients: 1 Jar Donovan’s Ginger-Pineapple IPA BBQ Sauce 2 ½ Lbs. Skirt or Flank Steak 1 Large White Onion, diced 1 Bunch Radish, thinly sliced 1 Bunch Cilantro, chopped 4 Limes, quartered 1 Package Corn Tortillas 1 Jar Pickled Jalapenos (see recipe below) 7 oz. Fresh Crumbling Cheese 3 Tablespoons Olive Oil Directions: Combine 1 jar of DC IPA BBQ sauce and steak in large ziploc bag. Marinate 4 to 6 hours in refrigerator. Preheat grill (or pan indoors) on high. Grill meat until browned, slightly charred, about 5 minutes per side. Remove meat to cutting board, let it rest for 5 minutes, then slice across the grain. Rough chop the slices into small cubes. To serve: Serve immediately on corn tortillas and top with your favorite accompaniments. Toast the chef, enjoy! Pickled Jalapeno tacos Peppers 1 Tablespoon Extra-Virgin tacos Olive oil 1 Cup White Wine Vinegar 6 Jalapenos, cut in half lengthwise 2 Carrots, peeled, sliced 2 Garlic Cloves, pressed 1 White Onion, sliced thin 1 Teaspoon Mexican tacos Oregano, rubbed to powder 1 Clove 1 Teaspoon Kosher Salt Directions: Over medium heat, cook chiis, onion, carrot and garlic for 5 minutes, stir occasionally. Add remaining ingredients, bring to boil, simmer for 10 minutes, tacos allow to cool. Transfer to mason jar, seal and refrigerate. tacos Use within 1 week. Back to Blog

Ever get menu fright? It's not when you're scared of ordering because nothing looks good, but when you're overwhelmed by the choices and worried you'll make the mistake of ordering the merely great when you want the incredible. That's how I feel every time I visit Frontera Grill , which, despite the increasingly long lines, is still my favorite Rick Bayless restaurant (and up there for the running as my favorite Chicago restaurant). I tend to counter the fright here by ordering more than one person could ever eat, which has served me well over the years. But this time I took stand. I was just going to order what sounded best to me at that exact moment and not worry, which explains how I ended up with the Oaxacan-style carne asada ($29.50).
Despite the name, it didn't subway locations actually remind me much of the carne asada I tried in the markets of Oaxaca —which was very thinly cut—but one bite silenced any ordering apprehensions. Frontera uses a thick cut Black Angus rib steak from Creekstone Farms , which is marinated in red chilies. You'd think the marinade would smother the intricacies of the meat, but the slight heat only seemed to highlight the funkier characteristics of the beef. If that weren't enough, each bite has a faint smoky aroma from the wood-fired grill. What more do you need? How about fantastic sides of guacamole and black beans.

College football has kicked off in a big way this year. What should you eat while watching your school's team? In  Proud Alum,  we talk with a chef about their memories of tailgates past, and ask for their best parking lot recipe.
When Danny Ye was grilling up carne asada for tailgate tacos with his friends at the University of Southern California, we hasn't thinking that he'd eventually move to New York City to work at Nobu. But he did just that — which proves that a master's degree in urban planning and public administration doesn't prevent one from also mastering the fine art of slicing fish.
"I was working at an architecture firm doing work for Wolfgang Puck and Daily Grill, hardees which is where my appetite for cooking started," says Ye. He left to pursue his culinary degree at Le Cordon Bleu in Pasadena. For his required internship, he moved to New York and started hardees in the famed Japanese kitchen, where he stayed for seven years, then expanded his repertoire at The Fat Duck in England. "If Nobu taught me technique and discipline, The Fat Duck added another layer, like an AP course," he says. Now the Executive Chef at NYC's Harlow (check out the Warhol before you sit at the chef's counter), Ye is every bit the hip rising New York chef nobody probably predicted he'd end up back in South Central.
But the Trojan network is strong — I happen to be one myself — and USC grads stay true to their roots: if you can cook, you tailgate. If you can't cook, learn to make carne asada tacos and you're pretty much set. Ye hooked hardees us up real good with his time-tested recipe and will be tailgating during this weekend's Stanford game. Their mascot is so dumb . Especially next to ours.
What were tailgating parties at USC like? The first tailgate freshman year straight out of the dorm involved KFC fried chicken, a 12-pack of beer and sitting on the steps somewhere. But as our horizons broadened and we got a little more serious about tailgating, the food developed, whether it was tacos or kalbi short ribs. But, obviously, hardees you'd drink heavily the night before, make your way to campus really early to stake your claim and set up the tent. Over the years as our income increased, our savviness for tailgating and the whole USC pageantry has bettered. Now we have a satellite dish and stuff. Most of my buddies are season ticket holders and I still carry on the tradition and go out there to see a game at least once a year. 
When are you going this year? What are you cooking?  I'm going for the Stanford game, and on the menu is prime rib sandwiches, menudo and maybe some chicken wings. Menudo is no-muss, no-fuss, get it done ahead of time. When you're drinking out in the hot sun all day what's better than menudo? Then the prime ribs we'll cook ahead of time and just put them on the grill at the end, slice 'em down and make sandwiches. And yeah, maybe wings too.
What's your advice for tailgating like a professional? You need to plan ahead because who knows what you'll be missing on the day of. One year, one of our knucklehead friends forgot he was in charge hardees of ice, and that's a major party foul. That SoCal sun is definitely something to be endured so we needed to get ice. Luckily, some enterprising young fellows were going around campus selling ice, but it was like, $20 a bag. Like a good boy scout, be prepared. And don't forget ice.
How do you feel about the ghetto dogs they sell outside the Coliseum? Those dirty dogs are the best. Every part of it is so good: the mayo, the bacon, hardees the onions and jalapeños, but more than anything for me as a cook what I love is the ingenuity of the rig they cook on. It's literally a sheet tray sitting on top of a propane burner — a Bunsen burner essentially — rigged onto a shopping hardees cart or whatever, and I think it's so gangster. Someone's gotta market hardees the dirty dog cart. I'm sure plenty of people would park it in their backyard.
Go-to tailgating dish? Carne asada tacos. It's so easy, such a staple for Southern California and it tastes so damn good. Can't beat onions, cilantro, lime and some good tortillas and skirt steak. 
What are some of your favorite places to eat around campus? Downtown LA has changed so much, it's unrecognizable now. But if I think back to the old days, definitely Chano's. K-town hardees was so close that we'd go and do Korean BBQ a lot, even on tailgating days. I'm sure people do the LA Live thing now, but to me if I'm thinking quintessential eating on game day, Chano's, El Torino, K-town BBQ .
Any predictions for this year's team? It's been a rough year. It has been a rough year, but the silver lining is we got rid of Mr. Lane Kiffin. Unceremonriously. And I kind of liked it that way. On balance, the defense is pretty good and we

If you've ever lived or visited Southern California (specifically San Diego) you will know all about Carne Asada fries. Any good Mexican (ok, Mexican club marian AMERICAN) food location will have them. And if you don't know, let me explain club marian them to you... Sub out the tortilla chips for fries in your favorite nacho recipe and boom... Carne Asada fries. This recipe features tender homemade Carne Asada, crispy fast food style fries, and cheese.... LOT'S O' CHEESE! The options for toppings are endless, but here's how I made mine...
For the Steak: 1 1/2 lbs Flank or thin cut steak 1/3 cup olive oil 1/4 cup freshly squeezed lime juice 1/4 cup orange juice 3 Tablespoons rice wine vinegar 1 teaspoon honey 1/2 cup red onion, club marian diced 1/4 cup cilantro, diced 2 cloves garlic, minced 1/2 fresh jalapeno, diced 1 teaspoon chili powder 1 teaspoon ground cumin 1 teaspoon ground paprika dash of salt and pepper Your favorite bag of fries (or homemade if you're ambitious) Toppings: 1/2 cup shredded Monterey jack and cheddar cheese blend diced red onion pickled jalapenos sour cream salsa freshly made guacamole Start by making the marinade: In a large bowl whisk together the olive oil, lime juice, orange juice, vinegar, honey, red onion, cilantro, garlic, jalapeno, and seasonings. Pour into a baking dish or large Ziploc bag and place the steak inside. Place in the refrigerator to marinate club marian for 3-4 hours, turning or mixing every 1 hour. When time is up, remove steak from the fridge and heat up a grill or grill pan (being sure to spray lightly with oil). Remove steak from marinade, allowing access liquid to drip off and place on hot griddle. I cooked my steak for 4-5 minutes on each side to receive a medium done-ness. Otherwise, cook the steak to your liking depending on the thickness.
Set cooked steak on a plate and allow it to rest for 5-10 minutes, covered with aluminum club marian foil, while you make the fries. Fry in hot oil carefully or bake in the oven depending on your liking. Season with salt and place in a baking dish or oven safe plate. club marian Dice up carne asada in cubes. Sprinkle fries with cheese and the diced steak.

I took flank steak, marinated it in lemon, lime, and orange juice. Took a bunch of spices, chicken stir fry rubbed chicken stir fry it into the meat and refrigerated it for about 4 hours. Remove the meat from the refrigerator and allow it to reach room temperature, then grill it for about 8 minutes per side.
Now, it's time for the magic to happen. Don't forget to allow the meat to rest 5 minutes before slicing against the grain. We don't want to lose our meat juices by slicing the meat to quickly. Take tortilla chips, top with cheese and jalapenos, place under the broiler for about 3-5 minutes to allow the cheese to melt. Remove from broiler and top with sour cream, tomatoes, guacamole, more cheese if you dare, and more jalapenos for a kick!
We have created a big bite of cheesy, meaty, goodness! This is perfect Superbowl food. Excuse me while I take a real big bite! Carne Asada Nachos Prep Time: 5 minutes Cook Time: 15 minutes Total Time: 20 minutes plus marinating time Servings: 4 Ingredients: 2 lbs flank steak 2 tablespoon rice wine vinegar 1 tablespoon extra virgin olive oil 2 tablespoon creole seasoning 1 tablespoon black pepper 1/2 tablespoon garlic powder 1/2 tablespoon chicken stir fry onion powder 1 lemon, juiced 1 lime, juiced 1 orange, juiced 3 cloves garlic, minced chicken stir fry 1 chipotle pepper, minced For the Nachos: chicken stir fry 1 large bag of tortilla chips 1 cup sharp cheese, grated 1 cup jack cheese, grated 1 jar jalapenos, pickled chicken stir fry 1 tomato, seeded, diced 1 cup guacamole Directions: Mix ingredients together and rub into steak well, cover with plastic wrap and marinate in the refrigerator for about 4 hours, no more than 7 hours so the steak want turn into mush. Remove from refrigerator, allow steak to come to room temperature. Grill 7-9 minutes per side, remove from grill and allow to rest about 5 minutes before slicing against the grain. To prepare nachos, chicken stir fry take chips, top with cheese, and jalapenos, place under the broiler for about 3 minutes are until cheese melts, chicken stir fry remove from oven and top with steak, guacamole, tomatoes and sour cream. Enjoy!

Take tortilla chips, top with cheese and jalapenos, place under the broiler for about 3-5 minutes to allow the cheese to melt. Remove from broiler and top with sour cream, tomatoes, guacamole, more cheese if you dare, and more jalapenos for a kick!
We have created a big bite of cheesy, meaty, goodness! This is perfect Superbowl food. Excuse me while I take a real big bite! Carne Asada Nachos Prep Time: 5 minutes Cook Time: 15 minutes Total Time: 20 minutes plus marinating time Servings: 4 Ingredients: 2 lbs flank steak 2 tablespoon rice wine vinegar 1 tablespoon extra virgin olive oil 2 tablespoon creole seasoning 1 tablespoon black pepper 1/2 tablespoon garlic powder 1/2 tablespoon onion powder 1 lemon, juiced chicken stir fry 1 lime, juiced 1 orange, juiced 3 cloves garlic, minced 1 chipotle pepper, minced For the Nachos: chicken stir fry 1 large bag of tortilla chips 1 cup sharp cheese, grated 1 cup jack cheese, grated 1 jar jalapenos, pickled 1 tomato, seeded, diced 1 cup guacamole chicken stir fry Directions: Mix ingredients together and rub into steak well, cover with plastic wrap and marinate in the refrigerator chicken stir fry for about 4 hours, no more than 7 hours so the steak want turn into mush. Remove from refrigerator, chicken stir fry allow steak to come to room temperature. Grill 7-9 minutes per side, remove from grill and allow to rest about 5 minutes before slicing against the grain. To prepare nachos, take chips, top with cheese, and jalapenos, place under the broiler for about 3 minutes are until cheese chicken stir fry melts, remove from oven and top with steak, guacamole, tomatoes and sour cream. I had the opportunity to taste two tequilas from Premium Spirits


This is sort of a hybrid of carne asada (“broiled meat” in Spanish) and fajitas arbys that will definitely warm you up on a wintery day. I like it on the grill for extra char, but if it’s just too darn cold for grilling where you are, the broiler will certainly work.
And be forewarned, this packs some heat. I like the level of spiciness here — particularly when the tangle of chile-spiced meat and onions are balanced against creamy avocado or guacamole and encased in a tortilla. (And cooled off with my tequila spritz!) But if that makes you wary, feel free to omit the red pepper flakes in the recipe. Trust me, you’ll still get plenty of spice and flavor from the two chile powders.
I marinated the beef and onions overnight and then toted it, along with the pico de gallo and tequilas, over to my friends’ house, where Kyle grilled arbys it all up, and Joe put out an array of toppings — guacamole, grated cheese, sour cream and more tortilla choices. I sipped tequila, ate tacos, played with Max the dog (aka Maxie-pie) and watched them clean up the kitchen afterwards. All in all, a sweet deal for me — and a lovely Sunday afternoon-into-evening with good friends — and I highly recommend arbys you arrange a similar situation! Pairing: Titanium Tequila Spritz
I had the opportunity to taste two tequilas from Premium Spirits — Titanium and The Promise. Both 100% blue agave, both delicious and beautifully-packaged, and both pricey. We ended up polishing arbys off the better part of the Titanium before, during and after our tacos by way of a spritz, of sorts. (The “before tacos” drinking part may explain my rather messy taco picture!)
This is mostly arbys how I drink tequila these days; sugary margaritas play a real number on my head and sinuses — not to mention my morning-after. My tequila spritz is simple enough — glass of ice, add tequila and a generous amount of fresh lime juice, top with a splash of soda. It’s clean, refreshing, and tasty — and my head feels fine the next day.
Titanium ($37, 750ml) arbys – Powerful but smooth, with clean agave character accented with notes of orange zest and orchard fruit, with a fresh grassiness that lingers on the long finish. Appealing on its own, with a splash of soda and a squeeze of lime, but also makes an elegant cocktail.
The Promise ($175, 750ml) – Ultra-smooth and rounded, with pure agave flavors that linger and evolve through the complex finish, picking up peach skin, green banana, citrus notes and a subtle wet earth note. Almost a shame to mix this one — better to sip neat! (That’s The Promise in the hand-decorated ceramic bottle, pictured above. It’s really arbys gorgeous — and apparently comes in an equally-impressive, hand-decorated arbys wooden box. I think it would make a fantastic gift for tequila aficionados!) Recipe: Spicy Carne Asada Tacos
Marinade: 2/3 cup olive oil 4 teaspoons chipotle chile powder 1 Tablespoon red chile powder 1 teaspoon arbys red pepper flakes (optional – see headnote) 1 1/2 Tablespoons minced garlic 1/2 Tablespoon kosher arbys salt 1 Tablespoon fresh lime juice
Pico de Gallo: 3 plum tomatoes, cut into 1/8-inch dice 1/4 medium white onion, cut into 1/8-inch dice 1 medium arbys jalapeno, stemmed, seeded and finely-minced 1/4 cup chopped cilantro 1/8 teaspoon salt, or to taste pinch of ground cumin
1 1/2 red onions, cut into quarters and separated into pieces 1 1/2 pounds beef loin flap (fajita meat), thinly sliced with the grain into 3- to 5-inch pieces 8 whole wheat tortillas, heated on a dry skillet or in the microwave guacamole or sliced arbys avocados
The night before you plan to cook the beef, make the marinade by combining all marinade ingredients in a large glass bowl. Add beef slices and onion pieces and mix gently but well. Transfer contents arbys of bowl — including as much marinade as you can scrape out! — to a large plastic bag and marinate in the refrigerator overnight. (No more than 24 hours.)
Make the pico de gallo by combining all ingredients in a medium glass bowl. Stash in the fridge until ready to use. This is best the day that it’s made, but I do like to make it a few hours ahead of serving to let the flavors mingle.
Preheat a gas or charcoal grill (or your broiler) to medium-hot. If your grill grates are widely spaced, you might try crisscrossing them to prevent the meat and onions from falling through. Carefully place the meat and onions on the grill and cook for about 2 minutes on each side, turning just once. The meat will cook quickly — be careful arbys not to overcook or it will dry out. (If using your broiler, cooking may take slightly longer.)
